Toasted Coconut & Seed Clusters

Crunchy toasted coconut and seed clusters make a perfect paleo-friendly snack. They are easy to prepare and packed with nutrients.

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil, melted
  • 1/4 tsp sea salt

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded coconut, sunflower seeds, pumpkin seeds, and chia seeds.
  3. Add maple syrup, melted coconut oil, and sea salt. Stir until well combined.
  4. Scoop small mounds onto the baking sheet and flatten slightly.
  5. Bake for 12-15 minutes until golden brown.
  6. Let cool completely before serving.

Notes

  • Store in an airtight container for up to a week.
  • For extra flavor, add cinnamon or vanilla extract.
