Sheet Pan Salmon & Gnocchi

A simple and flavorful one-pan meal with salmon and gnocchi, perfect for a quick dinner.

  • 1 lb salmon fillets
  • 1 lb potato gnocchi
  • 2 cups cherry tomatoes
  • 2 cups baby spinach
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup grated parmesan cheese
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss gnocchi, cherry tomatoes, spinach, garlic, olive oil, salt, pepper, oregano, and red pepper flakes.
  3. Spread the mixture on a sheet pan.
  4. Place salmon fillets on top of the gnocchi mixture.
  5. Drizzle salmon with lemon juice and sprinkle with parmesan.
  6. Bake for 20 minutes or until salmon is cooked through.
  7. Serve warm.

Notes

  • Use fresh gnocchi for better texture.
  • Adjust seasoning to taste.
  • For crispier gnocchi, broil for 2-3 minutes at the end.
