  • 4 cod fillets (6 oz each)
  • 1 cup pecans, finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix pecans, breadcrumbs, salt, and pepper in a bowl.
  3. In another bowl, whisk egg, mustard, and honey.
  4. Dip each cod fillet in the egg mixture, then coat with pecan mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear cod fillets for 2 minutes per side.
  7. Transfer to a baking sheet and bake for 10 minutes.
  8. Serve immediately.
