Panko Crusted Fish Tacos

Crispy panko-crusted fish tacos with fresh toppings.

  • 1 lb white fish fillets (cod or tilapia)
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 2 eggs
  • 1 tsp salt
  • 1 tsp black pepper
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • 1/2 cup mayonnaise
  • 1 tbsp hot sauce

Instructions

  1. Cut fish into strips
  2. Mix flour with salt and pepper
  3. Beat eggs in separate bowl
  4. Coat fish in flour, then egg, then panko
  5. Fry in oil until golden brown
  6. Warm tortillas
  7. Assemble tacos with fish and toppings
  8. Squeeze lime over tacos before serving
