- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix coconut, panko, salt, pepper, paprika, and garlic powder.
- Place flour in a separate bowl and beaten eggs in another.
- Dip each shrimp in flour, then eggs, then coat with the coconut mixture.
- Place shrimp on the baking sheet. Bake for 12-15 minutes until golden.
