Keto Seed Brittle

A crunchy, low-carb brittle made with nutrient-rich seeds, perfect for a keto-friendly snack.

Ingredients

  • 1 cup sunflower seeds
  • 1 cup pumpkin seeds
  • 1/2 cup sesame seeds
  • 1/4 cup chia seeds
  • 1/4 cup erythritol (or preferred keto sweetener)
  • 1/4 cup butter (or coconut oil for dairy-free)
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix all seeds together.
  3. In a saucepan, melt butter and stir in sweetener, vanilla, and salt.
  4. Pour the butter mixture over the seeds and mix well.
  5. Spread the mixture evenly on the baking sheet.
  6. Bake for 20 minutes or until golden brown.
  7. Let it cool completely before breaking into pieces.

Notes

  • Store in an airtight container for up to a week.
  • Replace erythritol with monk fruit for a different sweetness profile.
