- 1 1/2 cups almond flour
- 1/4 cup cocoa powder
- 1/4 cup powdered erythritol
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup melted coconut oil
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp red food coloring
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix almond flour, cocoa powder, erythritol, baking powder, and salt.
- Add melted coconut oil, egg, vanilla extract, and red food coloring. Stir until combined.
- Scoop tablespoon-sized portions onto the baking sheet. Flatten slightly.
- Bake for 12-15 minutes until edges are firm.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
