Shredded Potato Nests

Crispy shredded potato nests perfect for breakfast or as a side dish.

  • 2 large potatoes, peeled and shredded
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss shredded potatoes with olive oil, salt, pepper, and paprika.
  3. Press potato mixture into muffin tin cups to form nests.
  4. Bake for 20-25 minutes until golden and crispy.
  5. Remove from oven and let cool slightly before serving.
