Crispy Panko Fish Fillets

Crispy panko fish fillets are a quick and easy dinner idea. The panko breadcrumbs give the fish a crunchy texture without deep frying.

  • 4 white fish fillets (such as cod or haddock)
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, mix the flour, garlic powder, paprika, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Place the panko breadcrumbs in a third bowl.
  5. Dredge each fish fillet in the flour mixture, then dip in the beaten eggs, and finally coat with panko breadcrumbs.
  6. Place the coated fillets on the prepared baking sheet. Drizzle with olive oil.
  7. Bake for 15-20 minutes, or until the fish is cooked through and the coating is golden and crispy.
  8. Serve immediately with lemon wedges and your favorite side.

Notes

  • For extra crispiness, broil the fish for the last 2-3 minutes.
  • You can use any firm white fish for this recipe.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
