Coconut Shrimps

Crispy coconut shrimps make a delicious appetizer or snack. They are easy to prepare and full of flavor.

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Cooking spray or oil for baking

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix coconut, breadcrumbs, salt, pepper, garlic powder, and paprika.
  3. Place flour in a separate bowl and beaten eggs in another.
  4. Dip each shrimp in flour, then egg, then coat with the coconut mixture.
  5. Place shrimp on the baking sheet. Lightly spray with cooking oil.
  6. Bake for 12-15 minutes, flipping halfway, until golden and crispy.
  7. Serve warm with your favorite dipping sauce.

Notes

  • Use fresh or thawed frozen shrimp for best results.
  • For extra crispiness, broil for 1-2 minutes at the end.
  • Store leftovers in an airtight container for up to 2 days.
