Chocolate Dipped Seed Brittle

Ingredients

  • 1 cup mixed seeds (sunflower, pumpkin, sesame)
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 cup dark chocolate chips

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a saucepan, heat honey and coconut oil over medium heat until melted.
  3. Stir in seeds, vanilla, and salt.
  4. Spread the mixture thinly on the baking sheet.
  5. Let cool until firm.
  6. Melt chocolate chips and dip the brittle pieces halfway.
  7. Place on parchment paper to set.
